The Weekly Grin

How quickly the weeks and apparently months go by! My daughter has been growing up so fast, and has turned from a baby to a toddler, walking all around the house as we try to keep up with proofing it from her curious hands. I am loving quick and easy foods or meal prepping items so that my breakfasts and lunches are fast to prepare.

Chicken Meatballs – A local restaurant was featured on the Food Network and thusly shared one of their recipes. This is dynamite. We own a grinding attachment for our Kitchen Aid which makes this a cheap meal! I find that ground chicken can be very expensive, so I’ll buy chicken breast tenders when they’re on sale (typically around 1.59-1.99/#). When they’re the ‘tenders’, they’re already cut into strips, and all I have to do is lower each tender through the grinding mechanism and it grinds super easy. Serve this with some roasted vegetables with some of the sauce and you’ve got an easy meal!

Mango Sticky Rice – This is another great make-ahead breakfast. We bought some mangos in mango juice from Costco and I just have to pull out the coconut rice, slice up the mango, and I’ll normally eat it either slightly warmed or cold from the fridge.

Chicken pot Pie Soup – This one is a super throwback. I used to make this semi-often around 5 or so years ago. I love keeping evaporated milk in my pantry to make quick creamy soups or cheese based sauces. I start this soup with a roux (butter and flour), and then thicken with the evaporated milk and water. Add a little cheese when serving and this will definitely let you have leftovers.

Low Carb Slaw – I made this without the ground beef as a nice quick veggie side for dinner. Very tasty!

Burrito Bowls – Rice, Black Beans, Fajita Veggies (peppers and onions on high heat on a cast iron with a pinch of salt), Peach Salsa, cheddar, a bit of sour cream.
