Holiday Leftovers?

Happy Thanksgiving to everyone and I hope that your day was full of happiness and surrounded by family and/or friends! We are so thankful to have our little one with us this year. Last year at this time, I was pregnant and could only imagine looking into the eyes of my mini-me and falling more in love and being more thankful each day.

Thanksgiving, how you come up so quickly and then leave just as fast, only to leave us with full stomachs and fridges! I always cook enough during Thanksgiving to have leftovers, because leftovers are the best.

What are some of your favourite ways to enjoy your leftovers?

  1. Second or third Thanksgiving style dinner plates definitely happen. I hope you made sure to bring some extra tupperware if you didn’t host Thanksgiving yourself!
  2. Extra turkey? Shred it up and make a turkey pot pie. I really love Betty Crocker’s recipe with some extra spices to just amp it up a little bit, plus a small handful of sharp cheddar, yum!
  3. Extra seitan? If you made it with a red wine tomato gravy, this would be a great substitute in a shepherd’s pie! I like one of Rachel Ray’s old recipes (thanks WayBack Machine!), just substitute with vegetarian broth, and cube the seitan in place of the sirloin. Top with your leftover mashed potatoes!
  4. What about a play off of chicken and waffles? Put your stuffing in a waffle iron, cook until crispy. Top with extra turkey, gravy, and some cranberry sauce.
  5. Ridiculous subs — when I was in college, there were a couple ‘drunk food’ restaurants that would deliver food at 2AM. They had these RIDICULOUS sandwiches, with mozzarella sticks, french fries, fried chicken, ranch, all sorts of combinations of cravings into one sandwich. Why not do the same thing? Waffle some of that stuffing, add cranberry sauce, turkey, macaroni and cheese? Put it all in a sandwich and toast.
  6. Potato Cabbage Piroshki – use your leftover mashed potatoes and extra fresh herbs to make piroshki!
  7. Cranberry and cheese croissants! My sister actually made these for Thanksgiving brunch as a dish, but it’s great for leftovers too. I am actually hoping to later make some cranberry guava and white cheddar hand pies, so I’m going to save some cranberry sauce to create those!
  8. Sundaes! Pecan pie sundae, apple pie sundae, pumpkin pie sundae!
