The Weekly Grin

Good morning all!

I normally prefer sharing my Weekly Grin on Mondays, but this week got away from me! I actually cooked mostly my own recipes all of this week, so I wanted to share a few recipes from the last couple weeks. I’ll also be sharing some of my holiday planned recipes this weekend as well.

Creamy Lemon Chicken (Dinner Then Dessert) – Wow. This was fantastic. I didn’t cook this in a slow cooker, but got this done pretty quickly. We had this several ways! First day, we had it with a little bit of spaghetti noodles and grilled artichoke. The next day I wanted to bulk it up a little, so I sautéed some onions, garlic, spinach, and roasted red pepper and cut up the chicken and mixed it all together. This was served with rice for my husband and quinoa for myself. Definitely a new favourite recipe!

Just as a note with this one as well, this sauce is so good, you can definitely change out the protein to fish, or do entirely vegetables like the mix I added into the dish later on.

Garlic Tamarind Tilapia – I love going through food blogs and I stumbled across this recipe as I was browsing for some fish recipes. The pictures were interesting enough for me to try it! I already had tamarind paste from making pad thai, so I was up for testing it out and goodness gracious. What flavour!

Flour Water Salt Yeast Poolish Pizza Dough – I’ve been trying out this book’s pizza dough recipes and the crispiness and gorgeous bubbles in the dough with the poolish recipe is my favourite! I’m going to play with this a little more with adding some seasoning into the dough (my first thought is roasted garlic heads).
