Meal planning is a lot easier when you have some themes to play around with! For awhile we were doing Taco Tuesday every week, but somehow that went to the wayside. I was planning with my physical planner and flipping through some stickers when I saw my Taco Tuesday ones and thought, “It’s time for a revival!”. Here are a couple of my old favourite recipes!
Mix and Match Taco!
Filling
Crispy Fried Fish Tacos – Serious Eats : I love the batter in this recipe. I normally use a dark stout or porter and just love the taste.
Bubba Gump Fried Shrimp – If I’m going to eat shrimp, I love some fried shrimp. The great part about this recipe too is that it is fantastic as part of a rice bowl, so I’ll make extra of this for meal prep sometimes
Taco Red Beans – This is a great recipe that I’ve used for taco nights when serving a whole bunch of meat eaters in lieu of taco meat. It’s super flavourful, cooked down with tomatoes and a great seasoning mix.
Black Beans – This changes the flavour of the taco a lot, be sure to only add if you want a fish AND black bean taco
Roasted Sweet Potato – peeled, cubed and roasted. Yum! Adds a wonderful sweetness and great paired with black beans.
“Philly Steak” Veggie Mix – sauteed portabella mushrooms, onions, garlic and poblanos and then tossed with soy sauce and Worcestershire sauce
Peach Mango Salsa – Using the peach salsa recipe, I simply added mangoes in here as well. This will add a tropical flavour to your taco, and you can can these in advance.
Pico De Gallo – I normally purchase this from the store, but will be playing with my own recipe next summer harvest. This is a great alternative to the peach mango salsa and is more mild flavoured letting the filling and whatever sauce you choose speak for itself.
Greens!
- Cabbage is very crunchy, doesn’t soak up the sauce as much and is a great mild flavour.
- Lettuce is a bit more watery but also a great mix.
- Another great combination is shredded kale, cabbage, purple cabbage, frisee, tossed in a creamy lime avocado sauce. Add a little bit of lime to the kale before mixing with the other greens and sauce in order to help soften
Sauces
- Sriracha Mayo
- Mae Ploy Chili Sriracha Mayo
- Chimichurri
- Lime Avocado Crema
- Green Chili Mayo – green chilis, adobo chili, and mayo mixed together
- Salsa Verde (Serious Eats) – this one is more of a sauce than a salsa in my opinion
