The Weekly Grin

Hi everyone and happy Monday! Working through my weekly meal planning and wanted to review last week’s and share a few more recipes with everyone. I also wanted to share this LINK ROUNDUP I wrote up a couple days ago with all the recipes that I have shared that are not on my own blog in the Weekly Grin series. This last week we experimented with a new recipe and also played with some favourite older ones.

Monday

  • Garlic steamed rice and Black Beans with cornmeal fried Tilapia – this one is really simple! Add a couple clove of garlic into the rice cooker and cook, when finished, mash the garlic in with a little pinch of salt. The Tilapia was salted and then dredged in egg and cornmeal seasoned with additional salt, and Emeril’s Essence. This is a favourite seasoning mix of mine, and I keep a small jar of it at all times!

Tuesday/Wednesday

  • Leftover garlic steamed rice with Chicken with a Sun Dried Tomato Cream Sauce – this is an old favourite. I had originally made this with salmon and was just obsessed. I think I still prefer this over salmon — the creamy tanginess of this sauce pairs so well over fish. That being said, we enjoyed this but then had it over salmon on Wednesday. By Wednesday, the rice was a little old, so I stir fried it with garlic, onion, and egg.

Thursday

  • Creamy Cajun Chicken Pasta – One of Budget Byte’s most recent posts sounded too good to pass up. We don’t tend to eat a lot of pasta, so I didn’t make a big batch of this but my husband actually liked this so much, he was more than happy to take it as leftovers for lunch to work the next day!

Friday

  • We have taken to doing fried chicken Friday’s and it makes us feel a little fancy like we are still getting some restaurant food while not going out nearly as much. It’s nice to realise that and also take advantage of that now that we know 🙂 We’ll do seasoned fried chicken or fried chicken sandwiches.

For lunches this past week, I was eating my leftover Tuscan Bean Soup, Sweet Potato and Red Lentil curry, and Vegetarian Kare Kare. Breakfast has been some homemade pumpkin pie, which both me and the baby share 🙂
