Salmon Burgers

So I had NEVER had a salmon burger before my Uncle Manny came to town and decided he would make us some. His secret, he says, is that salmon burgers need to be made of salmon. No egg, no binder, just salmon. And man, is he right.

Ingredients:

  • 1lb fresh salmon, skinned, chopped in chunks
  • 1 bell pepper, chopped in chunks
  • 1 lemon, zest and juice
  • 1/4 cup chopped green onion
  • 1/4 cup chopped cilantro
  • 4-5 garlic cloves
  • 1 cup spinach, chiffonade
  • 1 roma tomato, diced
  • 1/4 cup red onion, chopped
  • 1 teaspoon mayonnaise
  • Salt and Pepper to taste

 

Preheat oven to 350′ F. In a food processor or blender, blitz the salmon, bell pepper, green onion, cilantro and garlic until it comes together. There should be a texture to the burger, it should not be a paste. In a clean bowl, turn out the patty mix, and add the zested lemon, salt and pepper, and mix gently. Shape into patties slightly smaller than the buns you’ll be putting them on. On a baking sheet with aluminum and a small amount of oil or on a silicone baking mat, bake for 10 minutes.

While patties are baking, chiffonade the spinach, dice the roma tomato and red onion. In a small bowl, add half of a juiced lemon, salt, pepper, and a little mayo and mix until creamy, combine with the spinach, tomato, and red onion.

Assemble the salmon burger! Toast the buns, add the patty and top with the spinach salad. Serve with a lemon wedge and enjoy!
