Oh man, you guys. My family got hit with the WORST bug. I’m not sure what it was, but it hit us hard and fast. June got it first unfortunately, had a fever and cried and cried — it lasted for five days and she was taking infant Tylenol as often as possible. Then my husband and I got it – muscle soreness and pain, cramping, fever, fatigue, headache etc… it was no wonder that June was crying so much. I went back to a few meal favourites to get us past it. We’ve also had some great friends who have brought us some food while we’ve been sick that has helped us.
Dalkjuk/Chicken Porridge – this is a Korean chicken porridge that is so comforting on a winter day. Also wonderful as a cure-all. I made this with chicken leg quarters instead of a full chicken since they were on sale.
Tuscan Bean Soup – This was fantastic! Such a good soup and again, greatly comforting while being sick. Again, a small substitution, I didn’t have white beans so I made it with pinto beans and it was still great!
Have you heard of Hilary’s Vegetarian Burgers? They’re filled with grains and nutty. We didn’t have hamburger buns but they are fantastic as ‘sandwiches’ on whole grain bread.
I know this post is small, but we have been relying on leftovers and comfort foods so nothing too crazy. I also will be posting about the meal planning challenge soon. I know that I mentioned it and then it totally fell off the radar but I am still working towards it!
