Harvest edition? As we are getting further into summer, things are not only blooming but producing! Both my garden and my parent’s garden are producing and the first thing that has started to spring up are these gorgeous huge zucchinis! They all decided to come up at once so my parents are swimming with them! I got four zucchinis and I’m loving it. My tomatoes are getting big but still very green. I also have still been working through the peaches that I mentioned in my previous peaches post.
Peach Bread @ AFarmGirlDabbles- This took longer to bake than the directions indicated, and it’s a bit of a dry dough but it comes out FANTASTICALLY. On the second bake through to make and freeze some mini loaves, I added more peaches, and just a little bit of water.
Zucchini Bread a la Betty Crocker – Betty Crocker is actually the cookbook I grew up with. I definitely have a few favourites and this is definitely one of them.
Fried Zucchini – This is a super simple recipe. Slice the zucchini thinly, but not too thin. Dredge in flour, then egg, and then cornmeal. Fry in butter until golden brown. Place on a plate with a paper towel to drain the oil and immediately sprinkle some salt. Let cool and then enjoy!
Paneer Tikka Masala – A great recipe that I’ve come back to a few times again. So tasty! I just wish I had a better blender so that the sauce came out creamier.
Potato Croquettes – These are the easiest little side dishes! I recently got back into looking at all of the super cute bento boxes and came across these. Mashed Potatoes with your seasoning of choice, I did butter, a bit of garlic and onion powder and salt — nothing too heavy and not too much butter! Dredge them in flour, egg and then panko and fry. Super tasty with the Tonkatsu Bulldog sauce.
Macaroni Salad – For some reason I was craving a childhood food I hadn’t had in years until my grandpa’s birthday party… MIRACLE WHIP. I found this salad and used regular mayonnaise with a little bit of sugar and vinegar and it gave me the tang I was craving.
