The Weekly Grin

Good morning all and happy Saturday!

Today is the last day of June and our baby is 8 weeks old! It has been a whirlwind, but one filled of love and sleepless nights. Each day we are settling further into our new routine and I’m also feeling like my old self again! I have started to work out again and my body is starting to feel more like my own again (but definitely has a ways to go!)

Recipes that we have been favoring!

Pad Thai (Pescetarian) – I did not realise I liked this until my sister-in-law cooked it for dinner and then I had my husband pick it up at a restaurant a couple of times. I scarfed this stuff down! It is absolutely delicious, the tang of the tamarind, the crunch of the vegetables and peanuts, and all of the colours! I will be sharing the recipe for this soon 🙂

Korean Street Toast (Vegetarian) – I am pretty sure I have mentioned this before, but this is such a fantastic melted sandwich. I am not a fan of eggs, but there is so many vegetables in this that the egg is inconsequential and really just used as a binder. You have the melted cheese, veggie omelette, and some fresh crisp cabbage on top, with the sweetness of a tiny bit of sugar and ketchup. I loved this in Korea and it is not hard to make at home!

Biscuits and Mushroom Gravy (Vegetarian) – Herb biscuits with mushroom gravy. We visited Portland last year and were amazed at how wonderful the mushroom gravy was! My husband actually switched from ordering sausage gravy to the mushroom gravy because he kept tasting mine and preferring it to his. I worked and worked on this recipe for quite awhile before finally finding our perfect combinations. This is another write-up I have to do soon!

If you can’t tell, I am behind! I have several recipes that I have actually written already but simply have no pictures. This is the area that I need to catch up on the most, but when you’re trying to balance taking care of a newborn and scarfing down food as fast as you can, the pictures end up getting forgotten. I hope to have some new recipes out very soon!
