Hi everyone!
Today was ‘Double Ad Wednesday’ at my local market and I ran over during my lunch break to grab some items so I would have plenty of time to prep tonight. I find the combination of prepping items in advance with meal planning makes my evenings go much quicker!
What I bought this week:
- Shrimp (2# bag)
- 4 lobster tails
- Broccoli Crowns
- Cucumbers
- Asparagus
- Avocados
- Rainbow Carrots
- Beets (golden and red)
- Strawberries
- Field Greens
- Green Onions, Cilantro, and Parsley
- Corn
- Cheddar
- Goat Cheese
What am I going to cook with all these items?
Tonight’s Dinner:
- Kimchi Fried Rice with Avocado, Fried Shrimp, and Yum Yum Sauce
Thursday evening both myself and my husband have dinner plans with our friends, so neither of us will be eating at home
Friday:
- Sous Vide Lobster with a Beurre Blanc sauce and roasted vegetables
Saturday:
My mum’s birthday is on Saturday, so my husband and I have breakfast plans together and then we will be off to visit with my family. I am planning on making strawberry and goat cheese popovers.
Sunday:
Veggie Burgers with Brioche Buns and Roasted Corn
Monday:
My Balsamic Roasted Carrots and Multi-Coloured Beets over top of field greens with Homemade Seitan
Tuesday:
Baked Potatoes and Broccoli Cheddar Soup
My meal planning style is fairly loose in that I try to keep pantry items stocked in case I want to veer off of the original plan, yet also give me some freedom if I need to cook something extra for lunch. For example, one of these days, I might get super lazy and make simple Avocado Toast instead! The key to my meal planning is shopping around sales and having a general plan in place.
