My husband has been out for these past few days and trying to keep up with my studio classes and all of the housework has left little time for leisurely picture taking while cooking! Over the weekend I hung out with The Girls, and tried out a new Macaron recipe below.
Recipes I’ve been favouring this week:
Fish Fillet with Tomatoes and Capers – Skinny Taste
I really really enjoy how simple and delicious this it but it isn’t one of my husband’s favourites. I really enjoy it! It’s perfect with swai or tilapia and extremely low calorie. Throw a big salad on the side of this and you have yourself an easy peasy weekend lunch or a quick weekday dinner. This week, I amped it up a little by salt and peppering a nice filet of swai, mixing together a little mayonnaise, parmesan and panko bread crumbs and baking the swai for about ten minutes and then broiling on high (with the fish on the lowest rack) until the breading was golden. Put it on top of the marinara and capers with a big Caesar salad on the side. Yum!
Caesar Salad Dressing – Epicurious
This is my favourite Caesar salad dressing and very easy to put together quickly! I massage lemon juice into 2-3 leaves of kale, and then put a tablespoon of the dressing in with crushed hazelnuts and a little bit of parsley. Mix it with your hands, it allows the dressing to get into all the little nooks and crannies. Top it with some homemade torn croutons!
French Macaron Recipe – Not so Humble Pie
My previous macaron recipe disappeared, so I used this one for a get-together with friends on Saturday evening. I was a little worried since I have had the most luck with the Swiss Method, but the French method worked very well!

I literally had one cookie left and I gave it to a friend who hates macarons (she said that it wasn’t like other macarons and quite liked it). The recipe really went swimmingly and much easier than I could’ve expected!
